Simon leads the development of food and beverage strategy for Europe and is responsible for delivering a more distinct restaurant culture. He is responsible for driving revenue, profit and guest love in the managed estate and creating better alignment within the franchise community. Simon’s team are responsible for delivering new Restaurant and Bar concepts and also lead the development of the food and beverage proposition in the Holiday Inn Open Lobby programme. Simon has spent 20 years in the food industry working across the retail and hospitality sectors. Simon joined IHG from Fortnum and Mason where he was Commercial Director, he held board responsibility for buying, retail, hospitality, marketing and Ecommerce. After graduating from The University of Southampton with an honours degree in History, Politics and Philosophy, Simon started his career as a graduate trainee at Marks and Spencer. After becoming a specialist in food hall management Simon joined the head office buying function. As a Category Manager, Simon was responsible for the development of the in store dining department. Driving the development of new concepts and opening 80 new outlets over 3 years.
